Catherine has an undergraduate degree in Human Nutrition and a postgraduate diploma in dietetics. Her PhD research focused on nutritional therapy for adults with active Crohn's disease. Thereafter, she completed a postdoctoral fellowship in nutrition screening and dietary management of inflammatory bowel disease at King's College London, United Kingdom.

Catherine has specific research skills in nutrition focused assessment, including anthropometric, biochemical and dietary assessment methods, and human clinical intervention studies. Catherine conducts research, and supervises student research, in the fields of nutrition and gastrointestinal diseases and disorders, in particular inflammatory bowel disease.
