Dr Andrew Reynolds, a research fellow at the Edgar Diabetes and Obesity Research Centre, University of Otago, has a three-year fellowship from the NZ Heart Foundation.
Dr Reynold's research focus is on how diet, and in particular our carbohydrate intake, can improve health and help to manage heart disease and type 2 diabetes.
''Many people talk about the amount of carbohydrates; high carb or low carb diets, for instance. This is the wrong focus, as carbohydrates range from simple sugars which in high intakes are associated with poorer health outcomes, to dietary fibres which in high intakes improves health. My research is about the quality of carbohydrates not the quantity, looking at the benefits of foods that are naturally high in fibre.''
Along with his interest in carbohydrate intake, particularly fibre and wholegrains, Dr Reynolds is keen to investigate the role of carbohydrate in blood glucose control, cardiovascular risk, oral health outcomes and cancer.
